This is how I would organise each portfolio case:
For screenshooting it is important to do screenshots before/after work. I recommend saving the fils as .jpg, .png and .gifs (for animations).
Tip: It is crucial to screenshot every page. I try to screenshot before pages (if I am doing a re-design), final files as well as screenrecord some process or final interactions like hover states or animations.
